A true Wensleydale, still made in the Dales at the Hawes Dairy in Wensleydale. Firm, but supple, light textured acidic cheese. Matured for around nine months for a fuller flavour whilst still retaining its freshness of flavour and slight crumbliness of texture. Delicous on the cheeseboard.
